Three Ingredients

What I love about running low on food is that it forces you to become creative with whatever you have left in the refrigerator.

So was the case the other night.
What to do when you have spinach, cherry tomatoes, white beans & garlic?

I made a frittata and topped it with caramelized onions.I was thinking of all the other possibilities, had the pantry been properly stocked...

Spinach, white beans, cherry tomatoes, garlic with:
gnocchi & fresh basil
homemade pizza with goat cheese
polenta & toasted pumpkin seeds
tossed with sauteed shrimp and feta cheese
penne, pine nuts and a healthy dose of olive oil
topping for a baked potato
chicken sausage and kalamata olives the pantry been properly stocked...
